Chef - Temporary / Seasonal - General (Europe)

Main Responsibilities
Ordering and purchasing produce for each cruise while remaining with the company budget
Purchase food and ingredients that reflect the best of Scottish food,incorporating seafood at several meals where possible
Food Preparation and Presentation
Prepare and present high-quality food consistently to the level and standard required by The Majestic Line and outlined within the chef's handbook
Express creativity through food selections,preperation and presentation while maintaining attention to detail
Provide guests with a personal service,maintaining the consistency and quality of dining on The Majestic Line
Guest Interaction
Lead the hospitality and enjoyment of the guest experience on each cruise
Liaise with Operations Manager on all aspects of the guest and charter requirements
Devise menu plans for breakfast,morning coffee,lunch,and dinner for guests and crew daily throughout the cruise,taking into account special dietary needs and allergies
Inform and communicate with guests about food being prepared for them daily,including where the food has been sourced and how it has been prepared
Galley and Food Storage Management
Responsible for all aspects of the galley and food storage areas,particularly cleanliness and hygiene
Ensure all preperation with the galley is carried out in conjunction with the company's Safe Food Policy and Health and Safety Policy
Adhere to daily and weekly cleaning schedules with completed documentation
Perform temperature checks throughout the day and complete appropriate documentation
Assist the Steward with weekly provisions order and ensure stock levels are maintained and rotated appropriately to reduce wastage
Main Service
Supervise the setting of the breakfast,lunch and dinner table and advise the Steward on what is required for each meal.
Ensure all meals are provided at appropriate times,working with the skipper and within the cruise timetable
Financial Responsibilities
Ensure any balance of the weekly float and receipts are rturned the TML Head Office at the end of each cruise
General Duties
Welcome guests on arrival with other crew members
Help with the allocation of cabins,giving a full briefing on the cabins
Assist in keeping all public areas tidy and safe for guests and crew while cruising and in port
On duty rota for bar until the last guests departs for bed
Respond to all onboard ships emergencies along with other crew members until stood down by Skipper
Be thoroughly aware of the companies Safety Management System (SMS)
Be thoroughly aware of the Standard Operating Proceures
Assist other Skipper/crew if required
Assist with tender operations
Keep crew quarters clean in conjunction with other crew members
Liaise with oncoming chef and complete full handover
Liaise with Operation Manager regarding an issues with provisions,suppliers,kitchen equipment,crockery,and guest requirements
Carry out other duties as requested by Skipper or Line Manager
Conduct inspections and spot checks of storerooms within the boat including the steward's department
Adhere to and monitor that HACCP rules and regulations are followed daily
Be responsible for all food safety,creativity and cleanliness
